If your console is quite a way forward, I'd suggest you try and mount your recorder on the transom, or as near to the transom as possible to reduce the impacts on the hard disk drive if you go down the Archos route.

My DV camcorder works great when in the waterproof bag right at the back of the boat strapped to the a-frame - I haven't seen any issues yet with the recording, but we've only been out in waveheights upto 5metres so far.

edit: just seen benc's msg - 380tv lines (yes, the new one is better, and for the same price too), 582x500 effective pixels (again, the new one is better), goes down to 0.5lux, and is completely submersible
I got mine from www.rfconcepts.co.uk at the beginning of this year after seeing the videos a few of my mates took when out cycling from their helmets.
