The Sprint 15 should be on your list.

I have sailed the Dart 16.... http://www.lasersailing.com/disp/uk/...00b7f60d6b3903 both single handed and with inexperienced crew (my kids) excellent fun, and pretty robust.
Worth a look.
Happy Shopping

The Sprint 15 (formally a Laser Dart 15) is suitable for single handed sailing. Add a Jib and Trapeze if required for double handed.

The Dart 16 is a plastic rotomoulded boat that can be reefed to depower the boat. I have seen these sailed sucessfully single handed and with crew.

Depending on what you are able to get hold of the Dart 16 is possibly easier and requires less maintainence.

I wouldn't go for a Stealth (F18) boat as these are a BIG handful in even the smallest winds.
