You'll always want more with a 60hp

I would have to agree, Nothing worse than being left wanting.

They will empty the flooding hull and plane with a 50hp, achieving about 18kts on flat water. I'd want a 70hp minimum if I was owning a SR5.4

Ollyit's does about 27kts with 60hp, but he's a racing snake and was solo when I clocked him. I wouldn't try and tow a skier with under 80hp on one.

I had a 75 hp on my 5.4 searider and it pulled two skiers/ringos with three adults on the boat at 20-25 mph.

37mph tops with two in the boat and no skiers. So I think you will be ok with a 60hp.
The chap who bought my boat put a 50hp on it and it goes ok, Nothing to write home about but if your looking to win any races you will need bigger.
