I ran the engine a couple of times today and it seemed slightly warmer, I must admit that it's always been summer when the mains water is a lot warmer than now. I guess I will do as advised and just hit the water and hopefully it will be fine.

you will find the temp gets warm when under load not at idle, normal for your engine

I haven't got an ETEC but a DI. My tell tale goes from being warm to cold to warm to cold etc if I leave my hand in position for a length of time at idle.

It might suggest a stat is stuck in the open position, but this is unusual as they normally stick shut and overheat the block. Are you sure you've even got a stat in line, might have been taken out previously and not refitted.

Incidentally my 150 has 3 stats, one for each block and one common to both sides.

Ours are barely warm after 8 hours out on the water. Yet they're fine, you can see the temperature increase on the icommand till the thermostats open. Do you have icommand dials? If so you would be able to see the same, or if they are getting too warm.

Telltale streams are usually the same temp as water going in (they bypass the water jacket and merely show a impeller that is functioning) the exhaust port on the leg which spits out water is what would let the warm/hot water out. Also your engine having a computer on board will tell you if it is overheating. Run it on the water and see what happens.
