Would 1 x 2000hp diesel or 2 x 1000hp diesel not be easier to maintian and run or am I really missing something major here?

And it's a British boat - not Yank.

Petrol now costs about 27P per litre in the US - we would pay about the same if it wasn't for TAX TAX TAX!!!

those oudboards are lighter than 1 x 2000 hp diesel or 2 x 1000 hp diesel + with outboards you have more free deck space + the outboards are probably also less expensive than the diesel engines + drives.

That's not the reason - it's that they can get shot at and lose 4 engines and still be alright!!!
