I've tried the ones with solder in and didn't get on with em trying to solder outside in wind and cold don't seem to work for me so those are my next to try.

You might use, to seal soldered or connector-connectors a type of liquid tape. I did and it works well. It's called: "Star Brite" Liquid Electrical Tape" The beauty of it is, after a couple of coats it will completely saturate the soldered or connected joints water-tight. It comes in a small can with a brush inside. The only cons I have with this product is, it will begin to gel-up in the can after a year or so after being opened but their is a thinner that can be used should that happen.

Crimp & solder, then 2 layers of heatshrink, then secure the wiring out so it doesn't sit in the bilge with a ziptie. That's about the best protection you can possibly get.

Mmm, I've seen it used successfully by manufacturers of certain outdoor equipments, but i would not be so sure in a marine environment.
Have you seen it used in this sort of application before?

Like you Ian although I use it for some things I'm not sure how waterproof it would be in this situation.

I've never had luck using self amalgamating tape on anything small. In truth, it's only okay at best on big stuff. I keep it as an emergency kludge, but wouldn't use it as a primary process.
Another vote for crimp or solder and a decent application of adhesive lined shrink tube.
