All the advice from serious tow sport groups would be you should have two people on the boat when towing inflatable toys: one to helm and watch where your are going and one to watch the toy and it’s occupant. You’ll need agreed hand signals for speed up, slow down etc. Not sure how old your son is but you’ll need to be happy with the possibility that he flips out the toy and you turn around to recover him perhaps ending up 100m away depending on your speed at the time, if you jettison the toy (or if has a quick release that triggers when he falls off etc)...
Make sure you have a knife or line cutter handy - getting the tow rope caught and being unable to recover your son is not a good idea.
If you’ve not already get some training on how to safely approach people in the water and recover them. Even inflatable boats hurt at 15 knots and props do unspeakable damage even at tick over. Lots of fun to be had - but safe technique is not learned from the internet.
