Raising my X Dimensions on an Inflatable cat.?

I was playing with the fixed trim adjust and found if I set it on the 5th setting from the bottom I picked up 5/6mph but the boat is very unstable.

Water pressure / flow was still strong so I thought about upping my motor 1” with a spacer to see if I can lower the fixed trim for better handling, but still keep the motor/prop up for speed.

What are most people running as far as height on there boats?
