Youngest uses one for carp fishing trips & bbq's on the beach with friends (does a mean pancake, takes pancake premix in a plastic bottle & a squirty cooking oil carried down to the beach in a backpack with the beer.). I borrow it if I'm camping.

Thats the usuall way we do it
...It all comes down to what "Portable" means
...many people many meanings in my experience.
Things like Distance to carry/wind/weather/cooking time/ location/ shelter...and choice of food to be cooked will all factor in deepening on the choice of cooking equipment for your Trip..and there is not a one fits all solution!...
I have used (and continue to use ) disposable Charcoal....Emberlite Titanium kindleing stove (always in my pack as a backup as it only weighs a couple of ounces and folds flat
)...and has literally saved my Bacon a few times!
A stainless fold up rack placed over ordinary embers ...a spirit Primus....and a Kelly...BUT WHEN you need it Fast!....And you and the Crew are COLD WET and (or ) Hungry and in a HURRY and want a decent feed!....believe me you can't beat a Pocket Rocket Gas Stove..a canister of Gas and a fold up frying Pan!
A good folding lightweight wind breaker to put around the Cooker/Stove is a real boon too!
