Well after considering everyone's comments, it looks like I'm reluctantly going to have to go for the double door like P.D. say's, by the time I've scratched the hull and skeg and done my back in, I'll wish I would have done the job properly in the first place.
Although, there is still the option to swap the trailer.

Picture of the boat sat on the trailer might help. Personally I'd be looking at narrowing the trailer before widening the door.

For what it;s worth, I had a potentially similar problem, and spent a huge amiount of time trying to find a braked trailer <2m width. There are (or were, I assume nothing's changed) Three- Brammber, The old Snipe (Now mersea Trailers) and a DeGraaf
I went for the Mersea one for various other packaging reasons (mostly down the the winch post could be configured to get the boat further over the hitch assy so it would go in and still be able to shut the door), and it is sat on a Knott axle. I guess you could either buy a new narrow trailer & punt your old one, or for a couple of hundred quid replace the axle, assuming the chassis is of a shape that will fit.
I have about 1.2" clear either side of the mudguards.

I'm going to give Ian at L.P.B. a ring when he comes back off holiday "must be spending my money" and ask him if it would be possible to get Indespension to swop it for a less wider model. I'm sure that can be done, I've only used it to bring home. It's got to be cheaper than £1600.00 to have a new double garage door fitted.

Cant you make some dummy wheels out of 3/4 inch ply wood and remove the mud gaurds.
Even make a bogey that fastens on to the underside of your trailer axel and then remove the wheels? seems straight forward enough.
