It would be a deal breaker for me. Other people seem to be happy lugging jerrycans or restricting their cruising area though.

My guess is that a diesel/outdrive RIB would have the biggest resale potential, followed by the twin outboards, then the jet drive which is quite a niche item.

I don't know, but my guess is that you may not actually end up drying the boat out on beach as often as you think you will. If you really do expect to beach the boat a lot though, then you may decide that a jet is the best compromise for you.
With an outdrive, as others have said, you'll need to check with individual manufacturers to see whether the leg will lift up high enough to clear the ground. On the other hand, I'm not sure whether it would really be a major problem if the skeg ends up digging a hole a couple of inches into the sand as the tide drops - you're going to scratch the gellcoat on the hull anyway!
