There is a nicely built new Humber ocean with a T top that often ties up at Mt Battern in Plymouth. Its new this year having been put together and operated as a dive boat by deep Blue

When I talked to Rich he had made / designed (not sure which) the T top himself.
I fancy the sort of protection a T top provides and a decent tow post on my next boat but lottery excepting that wont be soon.

Quite a few fishing boats use side curtains (caveat: they're usually cabin type boats...) Usually made from clear(ish) vinyl plastic, and rolled up when not in use.

If you're doing a T-top and adding curtains, I'd look at a one piece wrap-around (front and sides), roll the sides up from the back, and fold the thing up under (or over) the T-top and secure it there.
