What's the best stuff to use to recover seats? Pref in black.

Have a look on eBay for vinyl material or PVC, you'll get a few dodgy results but some are ok.
Either that or one of our friendly retubers might have an offcut....

You'll find most decent upholsterers/upholstery shops will sell good quality vinyl. You may even e able to colour match it to your tubes.

Hint. If you're cutting foam to make a base, use a cheap electric carving knife.

Thanks lads.
By a stroke of luck I've got the lend of one of those hot wire cutting things for shaping the foam.

Now, after seeing my dads hands after making a new cover for the back of his MY by hand. Can a normal sewing machine handle the stuff?

You can get it in other colours too. Or why not try using it with bin bags rather than freezer bags if you prefer that sleek black look ?!
