transom height does it matter

I'm soon going to be building a transom extension.
one thing ill be ensuring is a bit more angle to allow a larger range of trimming.
ill also be repowering aswell. I was considering Increaseing it to 30inches to allow more options on engine choice on the second hand market.
I can then reduce height as required depending on what engine I choose. I am lookin around the 250hp range the rib will be around 7.3 meters with the extension.
can anyone forsee a problem with centre of gravity if I end up with say a 30inch.
cavitation plate will still be in correct position, engine will just be higher.

I've had experience of driving boats with a high centre of gravity due to the height of the engine. If the weight is too high on some hulls then the boat may even lean over the wrong way in a tight turn. Chine dancing is another possible side effect.

don't really want that happening.
but still like the idea of more engine options, so may limit my self to 20 and 25 inch.
I have got 2 under deck 83lt tanks so this may help with centre of gravity(well at least at the start of a days ribbing).
